Volume question

Im pretty new to the whole volume thing, and was wondering how much difference an extra litre of volume would make to a board in terms of performance? Im assuming better paddle, but will it make it less maneuverable?
Im thinking my optimum volume is around the 23 mark (140ish, 5'9), and am currently looking at a board with 24.7L as a daily driver. Is that going to be too much? Im clueless.
